It’s no small matter that chicken soup is labeled soup for the soul because once you taste this one, you’ll feel your nervous system relaxing, your digestive system smiling and your whole body saying YES to the nourishment. It’s that good!
This simple, easy, non-oily chicken soup has its roots in roots! There is no frying, no added oil or butter, no major prep involved and it’s super yummy and so good for you. Bone broth is super rich in protein and minerals and will help you through this winter season especially if you load it up with garlic and chili!
What you need for your soup:
1 whole chicken (preferably organic)
Root veggies (2 turnips, 4 parsnips, 1 celery root, 4 carrots, 1 rutabaga)
3 cloves garlic (optional)
Fresh herbs (1 bunch dill, 1 bunch parsley or whatever other herbs you prefer)
1 red chili (optional)
Salt & pepper
How to make your soup:
- Place the washed herbs at the bottom of a large pot
- Place the washed whole chicken on top
- Chop up all your root veggies (mix and match to your taste) and throw them in the pot
- Chop up the leeks into large chunks and throw them in to the pot
- Throw in the garlic cloves whole or chop them up
- Add salt, pepper and chili (optional) to taste
Bring the soup to a boil and then lower it to a simmer immediately, skimming off any of the white foam on the top using a ladle or large spoon. Put a lid on it and let it simmer on low for an hour to an hour and a half. Then switch it off and let it sit for hour or overnight to bring out the flavors.
To serve: Sprinkle fresh herbs like arugula or sorrel or beet tops and a squeeze of lemon if you like.
